Potential energy is energy stored in an object due to its position in a force field or because of its configuration.
Some examples:

When you lift a rock up off the ground to a height it has potential energy . When you let it go it starts to fall to the ground gaining energy as it does so .This energy due to motion is called kinetic energy.

Hydroelectric power stations or mill wheels rely on what's called a head or height of water to function. The water behind the dam has energy due to its height above the generators at the dam.

A spring in a wound up clock has potential energy. As it unwinds, the potential energy is converted into kinetic energy in the motion of the gears of the clockwork.

The air in an air compressor tank has potential energy. It can do work as it expands and work the motors in air tools.

The potential energy of this water is converted to kinetic energy when the water is let down through a passage way in order to rotate a generator, which produces hydroelectricity.

Potential energy is also present in objects that are stretched or deformed from their original shape. For example, a rubber band, when stretched, has a potential energy, which is converted into kinetic energy when it is left to get its original shape.
